Do i put foam back in or something else .What did others do

I removed what was left of the original foam from mine but never insulated it afterwards. The engine noise doesnt bother me. West marine sells engine box insulation.

Sounddown acoustic insulation.

I also used Mertons hull and deck putty to bond balsa core to the completely rotted out engine box On my Tsunami.
I used soundown 1-1/4 sound deadening insulation. As mentioned, it's kind of pricy and it's also pretty heavy. As for its sound reducing quality, I found it to be ok but expected it to perform better. Don't get me wrong, it does reduce the noise significantly when trolling or motoring at mid to lower engine rpm's but when I run at higer speeds (like hour runs to a fishing spot) I use disposable soft foam earplugs that only cost pennies.They work better than anything. I bought the Soundown direct from them, but they protect their dealers (understandably) so its actually priced equal to any of the boat or marine supply dealers like Jamestown dist. Hamilton Marine out of Maine stocks it in many thicknesses and sizes and ships everywhere.

I had (2) i/o's and converted to (1) i/o - so, I cut the engine box and removed a 12-14" section from the cover - re-glassed well AND glassed-in a wood support from port to starboard, more aft, for my 35-40 gallon live well I store up there from time to time. I added the sound stuff Erebus mentioned - and it keeps the engine real quiet.

some of the shiny insulation stuff has a lead core ,really do not need that for a gas engine,[mostly diesel].otherwise it's not too expensive, looks and works well..although, far from original stuff.if that is important to you
