Default 20'SF 1972 I/O

I just bought a 20' I/O, the motor is not running, I am thinking about pulling it out, getting rid of the engine bed, decking it, redoing the transom and putting a bracket on it, with twin 90's or 75's. I like the security of two motors, because we fish the oil rigs 50 or 60 miles out. Has anyone seen this done or could tell me whether this may or may not be possible on this boat? Any advice would be greatly appreciated.
