Default She Crab soup recipe

Not to take away from Capn Chucks recipe and post so I figured I would just start another in case someone may want to search it up later. She crab meat(known as sooks 'round here) taste better than Jimmy meat(males) (sweeter wouldnt you know!)

Anyways if you can get fresh blue crabs they are the ticket- I imagine you could substitute other seafood type lobster/crab meat and get the same general taste.

Anyways - hope you guys try it out, as Capn Chuck says"this will make you slap your mama" as well.

4 T.melted butter
1 small onion, finely chopped
4 stalks celery, finely chopped
1 qt. heavy cream
4 T.flour
2 T. cooking sherry
salt and pepper to taste
1 t.nutmeg (small t =teaspoon)
1 T. Old bay seasoning
1 lb lump crabmeat
Saute onion and celery until translucent
add flour, cook to boiling.
Add heavy cream, simmer 5 minutes
Add sherry, seasonings and crabmeat
Heat through
Yum Yum!!!!

Dont know if Old Bay is readily available outside of Mid-Atlantic (I get requests from my friends in Hawaii and also Seattle, I use it on everything,awesome)- but if you cant let me know and I will pick you some up and mail it. Fresh backfin crabmeat- gonna get a pound out of my freezer now (as I start drewling)lol- [img]/images/graemlins/tongue.gif[/img]
