Default 23' seacraft

just picked up a 1972 23' seacraft today from "professor" needs a deck and a transom. boat has already been stripped, ready to put together. i would like to use some sort of high density foam for the transom and deck which is also impervious to water. any suggestions? also should i use resin or epoxy for this project?
