Hmmmm,
1) If you want to stay north of the Tampa area think about hernandosuitesandcondos.com in Hernando Beach. Lots of scallops after July 1st to the north off of Pine Island. Weeki and Chaz. rivers just to the north.
2) Camping at Ft. Desoto Park - south end of Pinellas County (mouth of Tampa Bay). Good fishing and some snorkeling around Egmont Key. Several successful CSC gathering there in the past. Sites 168 through 180 have good deep, protected water to park your boat right behind your campsite. Groceries and good restaurants nearby.
3) Primitive Camping at Cayo Costa State Park in Lee County (Charlotte Harbor). Good boating for 40 miles to the north or south and 20 miles to the east (Peace River) Cut those boys loose!
Martin, there are many other options in Florida including the CSC Gathering at Long Point, in May. You can't go wrong on easing down 19 , 98 and 41. I may pass you going the other way towards Horseshoe Beach, Steinhatchee, and St. Marks - too funny, "the grass is always greener!"

High praise for the Cayo Costa area.

Another possible is Mosquito Lagoon. There are several places to launch, fishing is very good, two or three places you can park the boat in the bay and walk across to the ocean, camp on the ocean side. Not sure what the camping rules are, if any, but its totally undeveloped. You probably won't see another soul on the beach. Just before the Long Point gathering should be a good time. For camping, you need to be there before the mosquitos.

You have one of the best boat camping areas in Florida right next to you, the big bay on Tyndal AFB. I spent several days in there a couple of years ago, wonderful spot.
