Default "New" to me, Seacraft 23

Hi y'all. New to this website.
I just purchased a '76 inboard 23CC here in Bermuda.
I ran one about 10 years ago with a V8 diesel and loved it.
Finally bought this unrestored model.
The mercruiser had been ripped out and the boat power washed. The removable deck is soft and the tanks are loose in the boat.
I intend to do a partial restore, painting and installing a new gas inboard.
Any pearls of wisdom? I'd like a little direction if anyone has the experience as to gears, props or anything else you may suggest.

I notice it would be easy to remove the T-top by the floor mounting hardware and then you could replace the console or rebuild it. I had one just like that on my 23'er and it's pretty much useless for electronics. I rebuilt the top half of mine, along with repairing 200+ holes from previous owners, to look like this.

Thanks Don.
I will be reconfiguring the console to accept a newer plotter that will accept EMS input.
Anyone have any experience with gear angle and ratio?
Thinking of the PCM 353. Cooling system seems robust and more "simple" plus I think the local dealer is about one of the best on the island.
