Default Closed transom, useless hatches

Recently acquired 19ft. 68 CC has been modified with bracket and closed transom with live well etc. In doing the work, whoever did the work essentially buried pop-up cleats and some of the wiring so I have two questions:

1. Where and how would you cut to add larger hatches or open it up to at least do some work? Would you change it to make it more accessible?

2. Could you add seating here? Would you build boxes and fiberglass them in? I have a similar question for the front as the bow is open but could I add a fishing platform with a large cushion like many other CC's?

I have a similar question about the floor. Apparently the fuel tank is leaking and looking under the console, there is a small hole which seems to indicate I would need to cut out a large portion of the floor.

I can take any pictures for advice just ready to start work but want to ensure I take it a step at a time. Thanks!
